Oliver Joire runs this workshop that operates three wind-powered gristmills. When there is no wind, donkeys turn the grinding stones. Farmers from the surrounding land bring their grain here to be processed. Oliver is assisted by his younger cousin, Mouse .
Oliver is the brother of Lucy Joire who works at the Bramble Bakery. They both live with their elderly mother Tillia and Oliver's wife Shellie outside the southern gate.
