Directions
- Heat olive oil until simmering in a heavy-bottomed 10-12 inch skillet over meadium heat.
- Add tomatoes, salt, ground pepper, and red pepper flakes.
- Cook until tomatoes soften and release their juices; 5-6 minutes.
- Stir in garlic and cook until fragrant; ~1 minute.
- Increase heat to medium-high
- Stir in tortellini and cook, stirring occasionally, until tortellini is plump and tender, ~3-5 minutes
- Remove skillet from heat and stir in spinach, ~1 minute
- Garnish with grated parmesean cheese and basil.
