Unforgettable Meal.

Thinking about what I would consider my "favourite meal", I suppose that could be interpreted in two ways. If supposed to prompt a memory of the best meal I’ve ever had, I can think of none other than the one I had at the Champ de Ciel - the first time I’d ever been to a high-end restaurant, especially a high-end restaurant in the heart of the city. The starting bouillabaisse steeped with rich vegetal flavours; the entrée of delicately poached turbot atop a warm fennel salad with a rich prawn bisque; despite both those dishes, the part of the meal that I remember most is the dessert - a dish the chef simply called Moss. While the whole dish was divine, the centrepiece of the green, underwater recreation was a sphere of pistachio mousse coated in matcha with a caramel gel sitting at the centre. Cracking open the sphere was like watching a wave of chilled deliciousness spill onto the plate, and that was, without a doubt, the best thing I’ve had in my life.
 
Now, if I were to think of the favourite meal to make for myself and eat day-to-day, there is one thing that stands out, I suppose. I love the warmth and heat of a spiced chicken wrap, the kind of thing you can pick up and have a bite of between playing a song or two at an inn. It seems a simple, unassuming thing, but being able to quickly chew down something that is warm from both the temperature and the spice, just to keep your awareness up between sets - that is such a singular eating experience, and I’m not sure it would be a satisfying answer to many people but it is true. Yes, it’s a simple grilled wrap of lettuce, chicken, cheese, and spices, but I associate that with being right inside the beating pulse of a musical performance, and in moments of travel like this where stopping to play for an unknown, unassuming group of people is impossible, then the wrap is something I can use to think back on those more pleasant times and makes it my favourite food to have.
