History

This science is a method of cross breeding said to have existed from 10,000 years up to all the intelligent races. It is difficult to parse out this alien practice of communicating, exchanging, or otherwise, exulting their marine gods.   Though, it might have been entirely practical, as their pantheon of anthropomorphised killer whales, spotted cats, horrible birds and the serpentine thing are explicitly stated as not caring for their worship.
It is not clear just how the tradition disappeared. Very few sources outside the beaches even mention those who have lived there for thousands of years. Presumably, the development of soul sculpting and the later discovery of knottery supplanted the usefulness of deep science.
The centre of importance moved further inland and higher into the mountains, where their skills were difficult to implement.

Execution

Deep science is a way of repurposing and integrating the organic environment to man's needs. It is a way of forging tools that is very unique. This otherworldly science is to control life itself. Somehow, the coastal people were able to interact with their chosen pet in a number of ill-remembered, but horrific ways.  

Grafting

Sample tissues are taken and then fused to a person's arms and hands to remotely control the mount from a distance.  

Breeding Instinct

Singling out behaviours to create automatic systems via natural tracking, warning alarms or aggressive tendencies for war.

Nutrients
Size is a function of food. Many of the purported creations are believed to have come in a variety of sizes, in accordance to their supply of food- ranging from the size of a whale to that of a frog.
Taints
The deep sea also has a lot of toxins and toxic things, like stone and jellyfish, to make clouds of poison and venomous blades.
Living Things
A continuous catch of deep sea creatures as the raw materials for experimentations. Alive or dead, the deeper into the depths from which the animals come, the more extreme things can be achieved.

There is a great deal of obvious artificiality in deep creations; supposedly including features like webbed hands and springy legs.

Observance

The practice is not well mentioned in the historical records. The coastal people believed, as many others do, that they are the creation of their gods. With the most cynical caveat that they are merely their gods' 'things' or their 'tools' to be done with as they will.

Whereas before, adherents enjoyed unnatural benefits like immorality or other secret knowledge. There might have also been some extracted chemical or enzyme from one undersea creature used in shaping non-corrosive metals.   Now, there is only remnantory knowledge left. Being biologically based, some of their 'tools' have survived, both assisted and unassisted, to the modern day. The dream fish, for example, was originally a small dull reed swimmer before careful pairings created the luminous fish that lights the nightway. Similar for medicine from coral or grafting from red weed.
