Almanari cuisine is the most common Dhelian food tradition across the Great Sand Sea region. Although some of the ingredients remind of the pre-exodus time living in the western high mountains, nowdays, almost three hundred years in the future the ingredients certainly reflect their modern way of life.

Undoubtlly, chickpeas play a significant role in modern Dhelian cooking. Chickpeas are grown along the whole stretch of the irrigated floodplains of the Tal'ness and is the stable food for both the lowly farmer's bread and the richest man's Almanari delicacy.

Almanari cuisine focuses on elevating the simple and earthly taste of the chickpea but introducing a variety of strong, spicy and sour tones to each dish. Most spices used are made locally but there is a thriving import for some of them and they are greatly sought for and valued.

One of the greatest concerns of Alanari cuisine is the ability to safely store the incredients for long periods of time during long haul travels up and down the rivers of Anvil. Many of the fruit and vegetables used are pickled in brime, olive oil or honey, while Goat's milk which is quite important for some of the dishes is preferred fresh off the travelling goats of the Dhelian ships.

The experience of the cuisine is always one of eye tearing spice that opens up the pores and causes sweat to pour out of all orphises, young children introduced to the kitchen very often eat great amount of yogurt as a side dish to lower the heat or add a lot more fish to the dish to take away its edge.

With this ingredient list, I am suspecting it is a Central America or South American cuisine. If it is spicy, it is Mexican!
