Rexan Cuisine

Traditional rexan diet is influenced by their origins in the Kalis Swamp of western Laxilþía, with fish, waterfowl and other creatures found fresh- and seawater being prominent, along with wheat, fruits, vegetables and a variety of spices.

Meals

Rexans from all walks of life sit or recline on mats during supper, with food arranged on a platter in the center, the latter being sometimes placed on a low table among the wealthy. The only utensils are spoons for soups and knifes to cut meat and fish.
The number of meals during the day varies by provinces and status, with the most common arrangement being breakfast (usually serving yesterday's leftovers), lunch later in the morning or at noon, with dinner being the main meal of the day. Aristocrats usually eat lunch earlier to make time for the midday steambath. Two or four meals are the norm in certain regions.

Food

Cereals

Bread (demlok), especially flat bread (jadlok), and porridge (kvalk) made from wheat or barley are the staple food in rexan cuisine. Flat bread in particular is often used as plates, dipped into or spread with a variety of sauces.

Fruit and vegetables

Rexans grow all kinds of leaf vegetables, beans and bulbs, and from other provinces come products such as bell peppers, avocado, olives, tomatoes and grapes.

Dairy products

Goat- and sheep cheeses are popular among rexans, with cow cheese being more common in the eastern part of the empire. Fermented mare milk, introduced by the Tingreni in the northern provinces is also consumed by rexan soldiers stationed there, often flavoured with vanilla, sesame seeds or honey.

Meat

The meat of pigs, goats, ducks (particularly Blood Ducks) and geese is common in rexan diet (especially for warriors and the aristocracy), while beef is popular in the east and horse meat to the north. Crocodiles, turtles, iguanas, frogs, deer, boars and other animals are hunted for food as well.

Fish and seafood

Fresh or dried fish is far more common than meat among lower class rexans, and different varieties of fish sauce are served with most food. Crabs, crayfish, shrimps and shellfish are eaten as well.

Spices

Salt and chili peppers are ubiquitous in rexan cuisine, along with garlic, mint, vanilla, saffron, sage, sesame- and poppy seeds.

Other

Duck- and goose eggs are popular among rexans, both at home and especially as street food, often salted, smoked or marinated in chili paste. Snails and insects are commonly eaten in Kalixíalx as well, particularly grasshoppers.

Drink

Mead (úls) and diluted wine (ganotól) are the most common beverages in rexan society, along with cacao which is restricted to the aristocracy. All of these drinks are flavoured in myriad ways, with some varieties being associated with specific festivals and seasons.
While drinking is tolerated among rexans, being intoxicated -especially in public- is frowned upon, particularly among the aristocracy.
