Red Beef Curry

A signature dish in the Olde Sunny Pub. It's a spicy beef and potato cooked in coconut milk. Despite having red/orange fatty liquid, it has a spicy but sweet taste. It could make you memorize the surrounding moment by the first time it touches your tongue.

Being sold for centuries, the Red Beef Curry is very well-known among the locals in the downtown Sungear. Everyday the meal has to be prepared in a large, dedicated pot; ready to be served at any time. As such, people like to call it fast food as a joke.

Ingredients

  • 500g Beefs, sliced
  • 500g Potatoes, diced
  • 100g Curry paste
  • 200g Coconut cream
  • 400g Coconut milk
  • Kaffir lime leaves
  • Red chili peppers
  • Plum sugar
  • Fish sauce
  • Curry Paste

    The paste is considered the most complex ingredient in the recipe, and so it's usually to be bought from the market.
    It is usually made by pounding chillis peppers, lemonglasses, galangals, kaffir lime zests, garlics, red onions, and roast coriander seeds.

    Preparation

  • Simmer potatoes on coconut milk on prefered cooking vessel (saucepan, pot) for 5 minutes until softened.
  • Adding beef and simmering for another 5 minutes, then seperated the meats.
  • Left with milk, add coconut cream and curry paste, stir until all fat start to come out.
  • Seasoning it with fish sauces or plum sugar.
  • Add kaffir lime leaves and red chili peppers. Stir until softened.

  • Serve on a plate of rice, or a seperated bowl for serving up to 4 people.

    History

    According to historian, the recipe was probably introduced in the pub a few hundred years ago by one of the pub's chef who was an immigrant. As many ingredients came from their native on the other side of the world, it had to be adapted. The current recipe is slightly changed for the original one, where pea eggplants were replaced by potatoes.

    Despite the rarity of ingredients, it become a popular yet common dish among the Merchant's Pie, the pub's original meal since its openning.
