Griffins have the bodies and hind quarters of lions, and eagle heads and talons for their front halves. They are opportunistic predators, but they have a preference for horse flesh or the flesh of horse like creatures. There is no consensus among scholars or storytellers as to which god, spirit or mortal created the first griffins or why. @Korus has created many similar animals in the past, but it seems unlikely that he would want to create a creature that favors horse flesh given that respect for horses is a near universal value preached by his followers. Griffins are not particular common but they are widespread, found in small numbers on virtually every land mass in Scarterra.
