Vampires primarily create more of their kind with a specific ritual that infuses humanoid bodies with their life energy and binds the body to a coffin. While corpses can be transformed into vampire if one is willing to sacrifice enough energy, living humanoids can be less straining to turn if a vampire absorbs their target's energy as they give up their own.
