Talas
Talas are some of the most common street food one can find in Dercian cities, they are valued for their combination of portability affordability and a countless amount of flavours.
The flatbreads are thin and soft and will be slightly charred, giving the perfect item for the variety of fillings. The bread itself are nothing special, typically made out of spelt or barley flour, with some variation depending on region and local grains and some places put herbs and spices directly into the dough.
Vendors typically will set up a large flat iron grill or for the more permanent places, a clay oven, the flatbreads for Talas are freshly rolled and cooked to order, ensuring the customers that the bread is freshly made, the fillings are prepared in advance and are then kept warm in pans or pots and each Talas can then be made in seconds once the bread is done, the vendor will skillfully layer the ingredients and serve it to the customer.
The skill and speed of the vendor will often draw a small crowd.
The serving style differs from vendor to vendor and city to city, some wrap their Talas in waxed parchment or offer small wooden skewers to keep the Talas secure and giving the people a way to eat without unrolling them.
Talas have become a symbol of the multicultural influence of Empire of Dercia with them originating in the coastal regions and then spreading inland when soldiers and merchants brought them with them and its likewise enjoyed by all social classes, ranging from the lowest peasant to the aristocrats who enjoy a more gourmet version.
