Old Castle Village
Demographics

Most of the sparse population of this once City-Hub is of medium to poor, merchants and artisans who did not have the wealth to move to Hyrule City, or refugees of the City after Ganondorf's rise.
Government
The village was ruled by a council of elders, and they were overseen by the Mageocracy in Hyrule City, paying yearly taxes to the city in exchange for keeping the roads that feed them.
With Ganondorf's arrival, the small village is now also a refugee settlement for those whose homes were destroyed in the battle, and are overseen by Ganondorf's troops, paying monthly taxes to keep from being killed.
Defences
There is an ill-kept wall around the village, it helped keep some of the worse of Ganondorf's mobs from destruction of the inner hub. However, most of the outside ring of the city is now in ruins or populated by Moblins and their cousins.
Infrastructure
The once great Castle Hyrule has fallen into ruins for the most part, with only the central keep having been transformed into a museum and library where all artifacts of the Royal Line were kept for safekeeping. Now, the keep is used by Ganondorf's clergy of Goron and Hylians loyal to him, and all artifacts have been taken to Ganondorf's new castle.
The village itself had fallen mostly into disrepair beyond the central hub that kept some level of activity once most of the population moved to Hyrule City.
