Dom Sao (Dom-Soh)

Dom Sao is a traditional dish from the far western part of Zhen Gho. There is a lake there called Yualing. A small town sits there called Jityin. It is very small and not highly traveled. However it has one specialty that brings in people sometimes, but also their greatest export. A special fish called a Silver Chun only resides in that lake and is fished by the people of the village. There they send this fish to other places in Zhen Gho and have the specialty dish of Dom Sao. It is this fish prepared in a very special manner.

First after they are caught the fish are smoked for at least a full day in several different herbs including garlic, pepper, turmeric, saffron, and a lake salt. After the smoking is done it can be transported much easier or prepared for cooking. It is then fried slowly in a very low heat until both sides are crisp. It is then placed in a sauce of soy, peanut oil, and sesame. Lastly it is surrounded by a ring of rice infused with jasmine.

People say that the flavors explode in your mouth as the fish melts. The smoking locks in the flavor allowing the cooking to solidify it. The sauce gives a moistness to the smoked cook fish. Lastly the rice is a nice paring that brings out the other flavors and used to soak up the remaining sauce. People use to come to the village for the dish and the fish began to become very rare. The village then came together and in order to save the fish from extinction they began to regulate how much they would take and export it to other cities. It is considered a rare delicacy that only the most wealthy taverns can afford to carry.

History

There has been a long history of this dish in Jityin. Every since the silver Chun was discovered the dish of Dom Sao has been made in the village. It started very simply but through the years there was more testing and changing of the recipe. The final recipe was discovered and has been used for many years now, pairing different sides with it depending on the location the dish is being served in.
