Grilled Desert Skewers

The grilled desert skewers provide a hearty and flavorful protein source, while the smoky rice adds a subtle smokiness to complement the overall dish. Found in Orlia city and around the area.   This meal needs 1 pound of tough desert cactus, cut into chunks. 1 pound of lean lizard meat, cut into cubes. 1 large red Embergourd (onion), cut into wedges. 1 Runepepper (red bell pepper), cut into chunks. 1 Sunburst Pepper (yellow bell pepper), cut into chunks. 1 tablespoon oil 1 teaspoon ground cumin 1 teaspoon smoked paprika. Salt and pepper to taste.   After covering in seasoning, thread the cactus, lizard meat, onions, and bell peppers onto skewers. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning when needed.   For the Smoky Rice:   1 cup long-grain rice (washed) 2 cups water, 1 tablespoon. butter 1 teaspoon smoked salt.   You can find this meal at a shop in the capital, or in a village. It's something that is normally found in a vendor stall, rather than a tavern or inn. It's something that people either eat for the morning or lunch as a quick meal. Most people grab this and go. The rice is something that is either taken with the skewers or left behind.   The lizards are large and one can make more than two dozen skewers are made from them. They are normally caught in the evening and brought into the city for the morning meal. This is also something that can be made while traveling. As most of the vegetables can be found in the area, growing in places where water has formed. Rice is also easy to carry and pack when people want to travel into the area around the capital.   Most people like spicy peppers, but there are a few that turn this dish aside because of the heat of the peppers.

This is an interesting recipe, although I don't know that I'd be brave enough to try it. Is it ever prepared without peppers for those who dislike the spiciness? How is the rice packaged for those who take it to go? How is the rice eaten with the skewers? What do people do with the empty skewers when they're done?

Please forgive the multitude of questions. This traditional food has piqued my interest and I just want to know so much more about it.
