The faith of the seven
Structure
The High septon is at the top. He is elected by the best Septon in Pentos. Along with the septon there are the Silent sisters and Septas. The silent sisters often work as carriers of the dead, they take them from their homes or streets or battle fields, and bury them. The Septa's are very similar to the Septons, working as nuns, often employed to teach children about the seven.
Culture
It's core beliefs are that of virtue and honor. In the holy book, the seven sided star, it very clearly lays out what should and should not be done by the masses. Clearly listing what is and is not virtuous. For instance, the obvious you shall not: kill, mame, torture, rape, steal, commit adultery. There is also commands like you shall: Help those in need, treat everyone as you would yourself, spread the word of the seven, take no gods who are not either one of the great 7 or the lesser gods, live a life as full of virtue as possible.
Public Agenda
Its public agenda, is very clear. Its to spread the word of the holy seven so that people may life a life of virtue and honor.
Assets
The 7 gods technically own the whole of the known world, but in reality it is the High septon who controls the faith. In asses this may include any and all land that a sept is built upon, any and all donations to the faith in the name of the seven, any and all garbs owned by the septons, silent sisters and septas for duties. This would also include any and all ornaments and statues that are in each individual sept around the world.
History
Parts of the religion dates back many thousands of years. However, a collection of all the gods under the religion of the seven was not formed until approximately the year 400 in the far east, slowly feeding itself into Pentos. By the year 100, it was somewhat large and considered one of the great religions, but it became hugely more popular after House Renly arrived in the year 1200, as they themselves followed the seven, and do to this day. Now it is the most prominent religion in all the kingdoms, with many nobel family following it. With the 'version' of the seven that has managed to embed itself into Pentos, there is a High septon unlike the versions of the seven around the rest of the known world. The high septon was introduced in the year 1221 after House Renly decided that the faith of the seven needed an official leader. the rest of the known world do not follow the high septon. However, there are septons, septas and silent sisters found all over the globe, though be it often in different names due to language.
Mythology & Lore
There are the 7 higher gods, then a bunch of lower gods that all live in the god realm.
The seven higher gods are; The creator, The god of art and culture, the god of death, the god of innocence, the god of vision (also known as the god of imagination), the god of chaos and the new god. The creator is the oldest of the gods, using his power to shape the world and to bind the stars to the sky. He was here before the rest, and made the world that you walk on. The god of art and culture is the god who took the creators world, and made it beautiful, by adding the people and the personality. The god of death, is as it sounds, the god of death. The god of death brought the humans death, to allow them to rest and the culture to evolve. Death however isn't seen as bad in the faith, but more as a final state, a place calm and peaceful. The god of innocence is the god of all purity. The god of innocence added to the world the innocent animals, the children and the purity that the people who worship the seven follow. The god of vision allowed the people to have sight, as in to be able to think what to do next. They are the god of imagination in a way, they make the people think outside the box, to improve their society. The god of chaos added to the world the fire, so that the humans may stay warm, but also so that they may dare to live. The new god, is the as you would imagine, the newest of the gods. They brought to the world the future.
Each god is worshipped by someone. No one god is worshipped more often than any other. A man may worship the god of vision to help him better think, then the next day worship the god of art and culture to help him make something beautiful. A pregnant woman may pray to the god of innocence to have a child, and to the god of art and culture so that they may be beautiful. A man may worship to the god of chaos or the new god for luck, or worship the creator to bring him wisdom.
There are other gods accepted in the faith of the seven other than the 7 higher, or great, gods. Other gods are countless. For instance, there is the green god, one of the more well known of the lesser gods, who is the goddess of the forest and all creatures within. It is said that the creator and the god of innocence sent her to protect the forests inhabitants from any evils that may lurk. One obscure god is the god commonly called Morvock, who is the god of blood.

Divine Origins
Parts of the religion are many many thousands of years old. For instance, the different gods where all worshipped separately for many thousands of years, in their own ways. Around the year 600 in the east, was the first known record of a religion being formed that followed the 7 different gods all at once. This spread to pentos in about the year 800 and has a small hold on Pentos by the year 1000. And as mentioned over and over, when House Renly arrived they spread it fiercely, and introduced the role of the High septon in the year 1221.
Worship
People worship by praying, often in a sept or on a 7 sided star drawn in the dirt. People often read the holy book, the seven sided star, before bed as a form of respect and commitment to the 7 gods.
Temples of the Faith are seven-sided buildings known as "Septs", with each wall dedicated to one of the seven aspects. Followers of the Faith gather in septs for group prayer, which frequently involves singing hymns of praise to the Seven. There are also monasteries, known as "septries", where smaller numbers of worshipers gather who have taken a monastic oath. Septries often have vows of silence or other requirements, and are places of quiet contemplation.

In Pentos that is. Pentosi 7 and the 7 in the rest of the known world can vary greatly, as discussed above, for instance, the 7 in the rest of the world do not follow a High septon
Religious militias have been known to pop up in the annals of history from time to time, sometimes in the form of crusaders, invading territories and slaying the peoples who do not follow the seven, or sometimes as groups of bandits working to save the poor folk or those in need of saving. This however, does not always work out as the people they go to 'protect' often end up dying in the process due to differing religions.

Founding Date
It's pretty undefined. Whilst there has always been sects and religions to certain gods, much similar to those in the seven, the actual religion of the faith of the seven gods did not get popular until around about the year 1000, more so in the year 1200
