Brimstone Curry

A spicy dish favored by the miners of the northern realms of both Cereon and Ilath. Variations are as many as there are mine shafts but a few basic incredients can be found in nearly all of them, namely Fae Root and Leave as well as Fingerfingers, although of different colorations depending on regional availability and personal preference.
A simple and hearty dish in nature, it may nonetheless be served at courts and taverns alike and is rumored to be a particularl favorite of the crown princess of Zeya.

Ingredients:
1 tsp ground Fae Root
1 tsp ground dry Fae Leave
½ tsp ground Gingerroot
1 large violet Bovist
2 tbsp puréed Tomatoes
½ green Firefinger, finely chopped
1cm piece Gingerroot, peeled and finely chopped
2 tsp roughground Sugar
½-1 tbsp Oil
3 Spring Onions, chopped
½ bunch of fresh Fae Leave, shredded
Cooked Rice (Potatoes or Graindumplings are also popular), natural Yogurt, green Sourberries, to serve



How to prepare:
STEP 1
Mix the dry spices and 1 tsp salt together in a bowl and set aside.

STEP 2
Slice the bovist into 1cm rounds, then score both sides of each round with the tip of a sharp knife. Rub with the spice mix until well coated (you should use all of the mix), then transfer to a board. Put 150ml water in the empty spice bowl with the tomato purée, firefinger, ginger and sugar. Set aside.

STEP 3
Heat the oil in a large non-stick frying pan over a medium heat and arrange the bovist in the pan, overlapping the rounds if needed. Fry for 5 mins on each side, or until golden. Add the liquid mix from the bowl, bring to a simmer, cover and cook for 15-20 mins, turning the bovist occasionally until it’s cooked through. If it seems dry, you may need to add up to 100ml more water to make it saucier. Season.

STEP 4
Scatter over the spring onions and fae leave and serve with rice, yogurt, and sourberries for squeezing over.
