Uses, Products & Exploitation
Fish Steaks - Golden Sturgeon varies in flavor, depending on their diet and whether they are caught in brackish or fresh water. Most have a mild, delicate flavor. The lean flesh is firm and meaty. Some compare its texture to chicken or veal. Raw sturgeon is pale pink and cooks up white. The tough skin is inedible.
Caviar - a rare and expensive delicacy made from the roe of the sturgeon.
Isinglass - Derived from the sturgeon's air bladder. Used for many purposes including as gelatin in confections and desserts, to speed fining and clarification in brewing, and as a glue.
