Basic Information
Anatomy
Vampires are, in essence, physically similar to whichever species they resemble or are from originally. That is to say- if an elf becomes a vampire, they are still an elf, but with the vampiric condition. There has been accounts of pixies who are vampires, vampiric naga are often referred to as lamia and so on. Most vampires tend to resemble elves in the sense that they have pointed ears, though the length seems to vary. Vampires are also recognized by their eyes as they are varying shades of red. Vampires typically have a paler or ashen complexion depending on which state of satiation they are in. A starving vampire will be more pallid than a full vampire.
Anatomically speaking, vampires have all the organs that should be there. They have hearts and accompanying heartbeats. They have a stomach that digests and passes solid food but does not give them nourishment. The only thing they seem to process as nourishment is blood, which is recycled in the system as their own. Vampires breathe but can go longer without having to breathe than the average human.
Vampires that are born vampires age normally until they reach the peak of their power, much like demons and other Immortal creatures. This is typically in the young adult-adult range of physical development as this is when the body reaches its peak performance.
Genetics and Reproduction
As previously mentioned, Vampires can reproduce. While they technically can that doesn't make it a common occurrence. The birthrate for vampires sired through biological reproduction is very low, which is good for the common population of juicy blood bags. The fertility of most vampires is very low, maybe birthing every century or two if they have a high fertility.
Behaviour
Vampires who live for long periods of time tend to develop what is eloquently referred to as eccentrism and not so elegantly reffered to as being bat-shit insane. While the older a vampire gets the more powerful they become, they also tend to start being more forgetful as the years run together. This is because the brain stays relatively the same upon becoming a vampire and most creature's brains cannot handle the concept of immortality. Most vampires don't make it but a few hundred years before being involved in some sort of accident involving opening the curtains on a warm sunny day.
Vampires born with the condition seem to fare much better, though as I've been told countless times by the matriarch of the Damon Family, "Eternity gives as much as it takes, my dear."

Vampires have a heightened sense of hearing, sight and smell. They can also see as if in low light in complete darkness.

History
Nobody quite knows the beginning of vampire history. Legends have been scattered across the globe about vampires or vampire-adjacent creatures since recorded history. Many legends seem to start with one progenitor vampire that spread the vampiric condition either by birth or creation from other creatures.
