Sweetgrass Ales

Sweetgrass ales refer to the family of ales originating in the territory of Bhegyar that use malted sweetgrass as their fermenting grain. They are also known as Kherlegshar in the local tongue. The two main varieties are Chishar and Isshar; other varieties include Minshar, a sour lemon ale made over centuries with wild yeast, Daeshar, a seawater ale made solely in Tomrokkhat, and Uveshar, a blood ale made only for certain ceremonies and rituals.

Chishar, sometimes called "Chish" or "Goblin Malt", is a bitter sugar ale. It was originally brewed by the Heartrend Marsh tribe, who credit its sweet taste to the inclusion of marshrose milk, though other varieties of chishar may use yak or cow milk, or any of a number of other plant milks. Chishars are characterized by a dark, red-black color, an ABV range of 8-10%, IBUs higher than 50 and notes of chocolate, coffee, caramel, licorice, banana and white sugar.

Isshar is a sour ale originating in the central grasslands among the nooson-herding tribes in that area. Dominant flavors include a citrusy sourness, a strong sweetgrass aroma and herbal notes, particularly rosemary and/or thyme. Origins are disputed, as are the "correct" list of herbs to include. The sour flavor is achieved by the inclusion of nooson-milk yogurt in the ferment. Isshars are characterized by a light, hazy yellow or orange color, an ABV range of 4-5%, very low IBUs and notes of orange, lime, sweetgrass, rosemary, thyme and cream.

Minshar is a sour lemon ale brewed in the caves of the southern lowlands of Bhegyar. The caves are shallow and face the valley, collecting the wild yeast that blows in from the grasslands. Minshars rest in wide, open brewing vessels that allow them to take in the wild yeast from the surrounding cave, before being transferred to barrels to ferment. The process creates a mild, often floral or fruity beer. Minshar is characterized by a very pale, white-to-yellow color, an ABV range of 3-7%, very low IBUs and notes of lemon, clover, grass and hard cheese.

Daeshar is a seawater ale long brewed in the Bhegyar capital of Tomrokkhot. The inclusion of seawater in the fermenting process gives the beer a deeply salty flavor, balanced by the delicate sweetness of the sweetgrass. Daeshar is characterized by a hazy yellow or green color, an ABV range of 2-5%, IBUs in the 25-35 range, and notes of salt and sweetgrass.

Uveshar is a blood ale brewed by the tribes around Tuva Grad. It uses blood, either humanoid or beast, as an ingredient and results in a cloudy brown ale. Its purpose is highly guarded, though it has been suggested that it stands as a magical component in some ceremonies and rituals. Uveshar is characterized by a cloudy brown color, an ABV range of 10-13%, IBUs in the 15-20 range and notes of iron, earth and moss.
