Sausage & Potato Soup

Slow Cooker Zuppa Toscana

  Slow cooker version of a famous restaurant soup. Easy taste of Italy brought home.   Servings 12+   10 qt Slow Cooker   6 hours low  

Steps & Ingredients

 

Brown & Sauté

  • 4 pounds pork sausage (spicy/hot)
  • Brown on medium-high for 5 to 7 minutes
  • 2 large yellow onions, chopped
  • 4 tablespoons minced garlic
  • Sauté for 3 to 5 minutes until translucent

  •  

    Add Potatoes

  • 8 large russet potatoes, chopped or
  • 24-32 Red Bliss Potatoes, chopped
  • Add cooked sausage and vegetables
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 teaspoons pepper flakes
  • 2 (32 ounce) container chicken broth
  • fill to level with water as needed
  • Cook 6 hours or until fork-tender

  •  

    Finishing Touches

  • 30-60 minutes before finished add ...
  • 1 qt of heavy cream
  • 1/2 cup parmesan cheese

  •  

    Serve With

  • Garnish with parmesan cheese
  • Bread or roll
