Romani Bean Stew with Chorizo
Bean stew is a comfort food in many Romani communities. Adding chorizo introduces a Mexican flair, enriching the dish with spicy, smoky notes.
Recipe Directions
In a large pot, sauté onion, garlic, and bell peppers until softened.Add chorizo and cook until slightly browned.
Add the soaked beans, smoked paprika, chili powder, salt, pepper, and diced tomatoes. Cover with water and bring to a boil.
Simmer for about 2 hours, or until the beans are tender.
Serve the stew garnished with fresh parsley.

8 ounces chorizo, sliced
