Asheerah's Oneeh Recipe

"It was as if I found a pot of gold at the end of the rainbow but in this case, it was a recipe, a recipe on how to make the Oneeh bread."

Purpose

Asheerah had it in for Ehsaan ever since she had arrived at the bakery. Her recipes were hers alone and if someone were to find out, not only will her entire business end but so will her reputation! This is why she kept this hidden even though Asheerah honestly knew that Ehsaan will have to find out sooner or later for her to keep the bakery going. She needed youthful hands along side her tiresome ones but Omid, feeling sorry for the newcomer had divised a plan to sneak a page out of her grandmothers journal.

This is a highly private document. Asheerah has never shared her precious recipes with anyone and was extremely secretive about it when Ehsaan had worked for her in the bakery. It was in fact stolen by Omid (her grand daughter) which was then given to Ehsaan in her time of need.

Asheerah's Oneeh Recipe

Ingrediants
-Suma flour
-Aqilpara salt
-Sachet of fast-action yeast
-Lilli oil
-Saffron or Marjan spice
-Water

Method:
1. Mix Suma flour, Aqilpara salt and a sachet of fast-action yeast in a bowl.
2. Make a hole in the centre then in it add Lilli oil and water. Then mix.
3. Sprinkle Suma flour over a desk and begin kneading for 10 minutes.
4. Once smooth place it in a bowl brushed by Lilli oil and cover the top with a large plate (making sure there are no gaps) and leave for 1 hour.
5. Take off the plate and gently mould the dough into a ball.
6. Dust it with Saffron or Marjan spice and scar an X shape at the top.
7. Heat in the baking chamber for 30 minutes until it sounds hollow underneath and the colour is golden brown.
