Peach Pancakes

This sweet treat is made and sold by streetvendors throughout Esca. What sets these pancakes apart from others is the use of peach sugar. This sugar is made by crushing frozen peaches into a fine powder. This powder is mixed two to one with sugar which is used in the preparation and sprinkled as a topping on these pancakes. The sugar is combined with flour, baking powder, salt, milk and a beaten egg to produce thick and fluffy peach flavored pancakes. It is a popular treat for kids, and in summer the pancakes are sometimes served with icecream or fresh peaches.
