Lumi Soup

Alright Foodie Friends, I've secured our first recipe to make with the glow shrooms I mentioned last week. This sounds like a good warming soup to make for even the most chilly days. It's pretty quick too!

    This warm, earthy soup was created by the Carthi people after they discovered the glow shrooms. The initial recipe has origins in their homeland. After losing access to the fungi previously used, they experimented with what was now available. It is popular during the colder months when the caverns' temperatures drop.    

Preparation

 

Step One

In a pot sauté the mushrooms and onions in butter over medium heat until the latter are soft and translucent. For a more authentic cooking style, a heavy clay or stone pot can be used.  

Step Two

Add the dill, thyme, paprika, broth, soy sauce, and wine to the pot. Bring the mixture to a simmer and let it cook until the liquid reduces by half.  

Step Three

While the soup simmers, in a small bowl mix the flour into the milk until smooth. Add this gradually to the pot and continue cooking until it begins to thicken.  

Step Four

Turn the heat to low and slowly stir in the sour cream and lemon juice. Once finished, serve in a bowl with a parsley garnish.   This recipe can be modified for different taste preferences. Other garnishes / mix-ins can be added like chili flakes, shredded cheese, or even bacon. Some potatoes or chunked meat may be added to make it more filling.

  • 4 Tbsp Butter
  • 2 Cups onion, chopped
  • 1 Lb Glow Shroom, sliced
  • 2 Cups stock of choice
  • 1/2 Cup dry white wine
  • 2 Tsp dried dill
  • 2 Tsp minced fresh thyme
  • 2 Tsp paprika
  • 2 Tbsp soy sauce
  • 1 Cup whole milk
  • 3 Tbsp flour
  • 1/4 Cup sour cream
  • 2 Tbsp lemon juice
  • 2 Tbsp fresh parsley

    I am certainly no cook, but still enjoy writing about foods. I looked up a recipie and this dish is essentially Hungarian Mushroom Soup, just with glow shrooms! As I develop more foods / ingredients of the world, I may come back to this article to add more setting specific flare.

    I assume the soup glows after the shrooms are cooked? I hope so! This is awesome. I imagine the variations based on altered colour of the glow depending how its prepared and what spices are added. Great stuff!
