Human
Generally considered by inhabitants of the known world to be the clearest of the categories, it's by no means obvious that this is the case. However, it would be pretty worrying if we humans couldn't clearly define what we are, because that would be giving in to the magical chaos. Never give in to the magical chaos. NEVER.*
In general, of course, humans are sapient beings that trace descent from pre-Crisis Homo sapiens. Since geography and history are funny this makes race and ethnicity also a little funny (aka complex enough that it can't fit this post), but suffice to say that there are people of all colors and many, many languages in the known world. Some of them aren't where you'd expect them to be, some of them have integrated into one another so thoroughly that it's no longer clear what to call them, but overall racial diversity in the world of Menagerie is not noticeably decreased.
Functionally speaking, anything that looks like what we usually consider a human being, and doesn't do anything magical, is probably human. As long as you define do anything magical to exclude the sensitivities (e.g. dream-travel and prophecy) associated with the Second Sight, which is a minority trait but not extremely rare. And, well, whatever it is that weird women do. Is a werewolf still a human, just because he was born as one? What about British nobility, whom everyone knows intermarried with fairies in the bad old days? Are they human?
Being human is confusing.
*Except when you should, and we all know when that is except when we don't. Shhhhh, don't question it. Don't rock the boat, that way danger lies.
