Hidetaki Kawa

Hidetaki is one of the youngest descendants of the prestigious Kawa family.
As a male heir of the Kawa family it is tradition for them to pickup a sword at a young age and train in the family's swordsmanship school and from the very start of his training his talent was considered prodigious. At the age of 68 Hidekawa dueled the then-current headmaster and swiftly defeated him, becoming the youngest headmaster of the Kawa family Dojo, also referred to as the "Water Dancers Dojo".
A few decades after he became leader and finally started to gain some recognition and influence, Hidetaki started voicing his political opinions more often with his father, often criticizing the City Council for how corrupted it was and how it unfairly favored the corporations while the people's interests were pushed aside. This persisted for a few decades until the fallout became too great and he decided to abandon his position as headmaster of the Dojo to establish himself as a restaurant owner.
Unlike the surrounding restaurants, Hidetaki dedicated himself to creating purely Usilian dishes, using regional ingredients, and fish from nearby villages. His talent in swordsmanship translated well to the preparation of fish and very quickly he became the city's best sushi restaurant.
Although none have ever seen him practice martial arts since he left the Dojo, every morning when his employees arrive he can be found maintaining his katana with mineral oils, sometimes worked up in a sweat, leading some to believe he still practices with it in secret.
Though he is not involved in politics, as a Kawa family member he still holds a few privileges, like the ability to bear arms within the city, so other restaurateurs often call upon Hidetaki to help deal with scoundrels or similar conflicts.
