Iron Maiden
The Iron Maiden is famous for its gathering place for pirates, bandits, mercenaries, and almost every type of unscrupulous person.
Purpose / Function
The building that was to become the Iron Maiden was a seaside fort from the time of the Hospitallers
Alterations
The mess hall and the kitchen have been converted into the dining area of the tavern. The old barracks were made into lodgings. The walls were reinforced to be able to stand up to modern weapons and well they are armed with anti-airship guns.
Architecture
It looks like a medieval fort yet its old stone outer walls have been reinforced with steel and brass. Its inner buildings look like a warm and lively inn
Defenses
The outer wall is made of thick limestone reinforced with plates of steel and pipes of brass. This walls are maned by Freemen and old Salt Bloods. The bastions are armed with anti-airship steam javelin and anti-ship steam harpons
History
Was built by the Order of Hospitallers yet as the years went on fewer and fewer Hospitallers came so after years it was abandoned. Years down the road a pirate group from the barber coast led by an ancestor of Teuta came and conquered Malta and set up the Iron Maiden to set some legitimacy to their new Island kingdom

The Iron Maiden attracts undesirables like pirate bandits mercenaries and almost all unscrupulous individuals. They stay in the converted barracks

You have the description part down pat. Some stories and illustrations are definitely needed to flesh out the bar. A quote from the current owner, talk of a particularly fierce battle, a mention of the local hooch, grog, rum or moonshine and how good (or bad) it is would add a lot.
